Delicious chicken and veggies salad.
- For this easy-to-cook and tasty salad you will need the following ingredients:
- Boiled chicken - 250g
- Cucumber - 1
- A small bunch of napa cabbage
- Corn - small jar
- Red beans - small jar
- Onion (+ 0.5 tsp sugar and some boiling water)
- White baguette ~ 4-5 pieces (+ salt, herbs de Provence, 1 tbsp of olive oil)
- Mayonnaise or Greek yogurt - 2-3 tablespoons
Cooking the chicken and vegetable salad:
Cut the baguette in cubes and fry in a pan with olive oil and spices.
Dice the boiled chicken meat. Slice the cucumber into strips, and chop the cabbage coarsely.
Add sugar and boiling water to the cut onion, and leave it for 10 minutes. (This way we will prevent the onion from being bitter).
Take a large bowl and start assembling the salad: add cabbage, cucumber, onions (without water), chicken, beans and corn, salt it as you like. Season the salad with mayonnaise or yogurt and stir everything.
Useful cooking tip: to prevent tearing, put the onion to the freezer for about 15 minutes before you need to cut it.
