A restaurant with no prices for food

The owners of the Texas restaurant Taste Community approached pricing quite interestingly. To be more precise, they didn’t set them at all - there is no cost of dishes at all in this restaurant.
You can come in, eat a portion of French fries, fish with a side dish in the form of Vietnamese seaweed, drink a glass of cold homemade lemonade, and pay as much as you like for it - either one dollar, or a hundred.

Do you think the restaurant is at a loss or keeps afloat?
It turns out that you can come, eat heartily, but in the check brought by the waiter you will not see the price of your meal. The management of the institution offers its guests to set the cost of dishes independently.

Now to the most interesting part - such an approach, as the owners of the restaurant assure, helped increase revenues significantly. The main reason is that people became interested in what kind of innovation it was, so the flow of customers grew very much. Most people, not wanting to expose themselves as greedy personalities, leave normal amounts of money.

The merit of the chefs is also worth noting - on popular travel sites, people praise local dishes.
How would such a restaurant feel in your country? Is there a habit or a tradition of leaving a tip? Is it compulsory-voluntarily in your country? Will such a pricing option take root with your fellow-citizens?
